Il Fiorile is managed by Massimo and Emanuela and who, in the little hamlet of Castel Ratti, in the community of Borghetto Borbera, decided to build there their own house, and next to it, their own business activity.
Il Fiorile is the fruit of a deep-down passion for cooking and for hospitality, where the interest and care for the quality of the produce used, is particularly felt, and love for the Val Borbera is transmitted through the preparation of excellent food, together with the warm hospitality typical of the old country houses of this region.
In the kitchen Chef Massimo prepares dishes for his guests which respect the best traditions of the Val Borbera revisited in modern taste. Emanuela meantime, manages the 3-Star accommodation, pampering and taking care of those guests who wish to discover this land rich in history, local culture and nature.

I love this territory and its aromas: wild mushrooms, truffles, wild game, chestnuts from the woods, and the seasonal fruits which every season brings us.
I love to create new dishes, which evolve continuously renewing the well-proven flavors with provoking combinations
I love to suggest cuts of best-quality meats but also to risk creating dishes using lesser-known cuts.

I love to use a mixing palette of ingredients as ample as possible, trying out different flours, spices and then all possible fruits and vegetable which I can find.
I love to pamper my clients, make them feel at home, offer them an aperitif, so that they eat in a relaxed mood, fully appreciating the good food prepared for them with care.
